Kalsounia - Anevata For example, a food that must be tasted in Crete is "Anevata", an of the moment kind of pie called kaltsouni. It is one of the most exquisite and delicious hidden dish. Anevata are those pies that have yeast and "rise", while on the spot they are made with a simple sheet. The simple kaltsouni looks like tartlets in an asteroid shape, while the anevata are made mainly for Easter and are a bit reminiscent of the tsoureki. Both are filled with mizithra or cream cheese, honey and cinnamon. They are eaten both for dessert and to accompany your raki, which suits both slightly sweet and cheese.
